Ensalada de Amarillitos

INGREDIENTS:
3 ripe plantains
1 purple onion
2 tablespoons cilantro
2 bell peppers (red & green)
1 lemon
1 tablespoon apple cider vinegar
2 to 4 tablespoons olive oil
PREPARATION:

Cook ripe plantains in small pan. Chop onion, peppers and cilantro (no cooking). Stir chopped ingredients with cooked plantains. Add olive oil, vinegar and lemon juice to taste. Serve and enjoy!
